Carrageen is a bushy reddish purple plant also known aas Irish Moss because of it's abundant growth along the Irish coastline.
It is harvested in late Spring through Summer and allowed to naturally bleach by the sun. A seaweed rich in calcium and other essential vitamins and minerals, it is used in the making of jellies and blancmanges and as a thickening agent for soups and stews. Traditionally it is served with honey and lemon as an effective and soothing cough remedy. This product has been harvested from the Atlantic waters off the Northwest coast of Ireland.
